I must confess I am a terrible cook! But my mother-in-law Carmen is an excellent cook, and always spoils us with her home-cooked meals whenever we come to visit in Valencia. One of the ways we’ve bonded is she has been teaching me a few of her recipes. Here is a recipe for coca, a pastry that is typical in the Spanish Mediterranean coast. It makes for a delicious breakfast or snack!
Original recipe in Spanish
Ingredientes
- 4 huevos
- 1/2 kilo de azúcar
- 1 vaso de aceite (250 cl)
- 2 vasos de leche
- 1/2 kilo de harina (1/2 paquete)
- 4 sobres de gasificante
Instrucciones
- Mezclar todo en este orden con una batidora en un gran cuenco
- Calentar el horno a 150C (posición del horno arriba y turbo)
- Poner la masa en un recipiente
- Poner canela y azúcar encima de la masa
- Ponerla en el horno a 150C por media hora
- Buen provecho!
English translation
Ingredients
– 4 eggs
– 1/2 kg of sugar
– 1 cup of oil
– 2 cups of milk
– 4 packets of raising agent (“gasificante”)
Instructions
In this order, mix these ingredients with a beater in a big bowl.
– Pre-heat the oven to 300F.
– Put the mix in a rectangular baking pan.
– Sprinkle cinnamon powder and sugar on top of the mix.
– Put the mix in the oven at 300F for half an hour.
– Enjoy!
